Hey. I'm Amanda.

WE BOUGHT A FOOD TRUCK!!!
Did I mention Dan and his friend bought a food truck?! They’re going to make the most delicious things and sell them around town! Come get the first taste this Saturday during their inaugural event held at Headwaters Park from 2-6pm! See you there!
They’ll be specializing in a wide range of sandwich preparations using free-range, locally sourced pork, chicken, and duck.
**This is the before photo. It’s being painted and re-logo’d right now as Affine Food Truck!
Have more zucchini than you know what to do with? Try one of my favorite recipes below!
1. Zucchini Nut Cookies: The perfect sweet and savory whoopie pie! These were a total hit at work and at home. I only made a single batch, for fear I’d eat the entire second batch if I made more (which definitely would have happened). SO GOOD!
2. Zucchini Parmesan: I love that this recipe uses olive oil instead of a egg dip before breading. A great lighter alternative. And, there are tons of ways to serve these…
-Over marinara sauce (shown in my photo)
-In a vegetable panini. It took them to work this week to use up my left over! Just add bread, spinach, tomatoes, cheese and toast up!
3. Grilled Zucchini: This is my husband’s recipe and it makes the BEST GRILLED VEGETABLES!
Slice 1/4” pieces of the squash (I find long ways to be easiest to grill with). Toss in a mixture of equal parts olive oil and balsamic vinegar. Salt and toss on grill. It works well with most all types of veggies. Here is a fancier version of the recipe.

I made this summer berry tart for my mom’s birthday last weekend. I must admit that I used pre-made crust to save time, but did whip up the filling from scratch and even added my signature vanilla beans! I also doubled the filling amount as I found it a little skimpy for my deep pie crust.
This is the perfect treat to bring to a party and impress your friends! In case you were wondering, it was as delicious as it looked! Add some fresh whipped cream or vanilla ice cream and prepare to consume at least two pieces.
I’m back in the game! I’ve been spending the summer balancing napping, working and getting our home and lives ready for our little bundle to arrive in October. I still owe some major house update photos- hope to get to that this weekend. In the mean time… here’s a little round-up of cute unisex birth announcement design ideas.
Stop by the Oakdale Neighborhood Home Tour this Saturday from 11-5pm! Our home will be featured, along with nine others. We’ve been busy finishing our master bedroom and lofted office… which we’ll be burning the midnight oil on all week to get done in time!!!
I was lucky enough to help design/develop this product! Stop by Vera Bradley retailers June 28th to see it in person!
My comforter is available at Bed Bath and Beyond now! Mine was a Christmas gift a few years ago and was pretty expensive to order and ship from the UK. And, it’s only a comforter cover (Bed, Bath and Beyond set is a full comforter). I’m thinking of adding some accent pillows to our bed from this collection!
Dan and I spent a few days in Baltimore last month visiting some old friends for a wedding! It was the perfect trip. Activities included a hair cut from my favorite of all time: Cliff at Sprout, a delicious brunch from Woodberry Kitchen (go there!) and a shopping spree at my favorite boutique: Trohv. The photo above is from a cute display there. It really makes me want to nail painted spoons to a wall! Plus I’m a huge sucker for navy paint.
I want to go to there.
Another creative invite from a friend for a wedding this summer! The composition book was a 5” x 7” greeting card with the lined paper printed on the inside.
I love how they shared the wedding website and registry info on printed post-its on the back cover.
